Minerals content in fruit and vegetable juice

Vegetables and fruits provide excellent sources of nutrients, such as protein, vitamins, minerals and fiber, as well as non-nutrients phytochemicals such as sulfur-containing compounds. There are about two dozen minerals that your body needs to functions normally. Minerals – along with vitamin – are components of enzymes.

Minerals also make up part of bone and blood tissue and help maintain normal cell function. The major function minerals include calcium, sodium and sulfur.
Ten trace minerals are considered to be essential for health – those needed in very small amounts include boron, chromium, cobalt, copper, fluoride, manganese, nickel, selenium, vanadium and zinc. Plants incorporate minerals which occur in inorganic forms in the soil into their tissues.

All vegetables and fruits contain important minerals, such as potassium, calcium, magnesium, phosphorus, iron and zinc.

As part of this process, the minerals are combined with organic molecules into easily absorbable forms, which make plant food an excellent dietary source of minerals.

Juicing is believed to provide even better mineral absorption than whole fruits and vegetables because the process of juicing liberates minerals into highly absorbable form.
